The white wines of Hautes Côtes de Beaune, are characterized by their attractive freshness, they have a firm flavor enhanced by good acidity and a slight roundness. Made to be young, they evolve quickly in 3 to 7 years depending on the vintage.
The Lycée Viticole de Beaune produces this wine from grapes from a plot on the Mont Battois experimental site, in the town of Savigny les Beaune, for a surface area of very qualitative Chardonnay clones of 1.13 ha.
The vineyard of Mont Battois is established on a skeletal soil of the brown clay-limestone type, superficial and stony with a slight slope of 3 to 5%, hence an east-south-east orientation. The situation at the top of the coast explains the precocity and the quality of this sector for this appellation.
The aging is done in part in vats and the other in barrels for a more or less important part depending on the year, over a period of six to nine months.
Pale yellow in color, the nose presents notes of acacia flowers and barley malt evolving on fresh almonds, apricots and quince paste on the palate.
Drink now, can also be stored up to 5 years. Goes well with terrines, poultry or as an aperitif.
