The A.O.C. Côte de Beaune, to be distinguished from A.O.C. Côte de Beaune village, is a small appellation of 52 ha located exclusively in the town of Beaune, for an average annual production of 225 hl.

The red wines are pleasant, supple and fragrant. Attractive by their freshness, they can exhale the violet in the middle of a maceration of morello cherries or strawberries-raspberries. Weak in structure, they evolve rapidly in 3 to 7 years depending on the vintage.

The Lycée Viticole de Beaune produces this wine from two plots:

* La Grande Châtelaine: purchased in 1968, it was replanted in two stages. First in 1978 with a massive selection, then in 1982 with qualitative clones on SO4. Located on a hillside, at an altitude of 300 m, it has a slope of 10% with a southern exposure. Its soil is fairly superficial limestone brown (70 to 22 ca).

* Le Dessus des Marconnets: on an emphyteutic lease with the City of Beaune, it was planted in 1992 with three qualitative Pinot noir clones (115, 777 and 943). At the top of the hill, with a slight slope of 3 to 4%, it benefits from an ideal due east exposure. Its soil is poor, very shallow clayey-sandy-loamy limestone.

Vinification is done with a short maceration of 7 to 8 days. The pigeages are very limited to have a balanced, supple and fresh wine. The aging continues in barrels of 3 to 5 wines, over a period of eight months, in order to preserve the aromas of fresh fruit so characteristic.
