BEAUNE 1ER CRU "Les Perrières" 2016

The A.O.C. Beaune 1er Cru "Les Perrières" is one of the best known among the 39 localities with this level of appellation in Beaune.

The Lycée Viticole de Beaune produces this wine from a rented plot with the Hospices Civils de Beaune. Covering an area of ​​77 ares, it occupies the hillside, from 250 to 300 m above sea level, above the "Clos du Roi" and "Cents Vignes". A steep slope of 5 to 20% exposes it due East. The soil being also very stony clay-limestone brown, all this contributes to the production of very good quality grapes in this vine (replanted in 1971, 77, 78, 80 and 2012).

The vinification is done with a maceration of 15 to 20 days in a manual punching tank adapted to reveal the finesse of the Perrières terroir. The wine is then fully aged in oak barrels. The proportion of new barrels is around a third and the aging period is 9 to 12 months.

Perrières are fine and delicate wines but also generous, fleshy, full and charming with a very melted tannic structure which gives them a guard of 6 to 10 years, or even more for great vintages. These wines are typical of the Beaune vineyard with their more or less candied red fruit aromas (morello cherry, strawberry-raspberry, ...)

These particularly elegant wines will be excellent to accompany a mignon of veal for example.
